How to Roast Your Fresh New Mexico Green Chile
There’s nothing quite like the smell and flavor of freshly roasted New Mexico green chile! Once you receive your fresh chile, you can roast it using a grill, oven, skillet, or air fryer.
1. Roast Your Chile
Grill: Place chile directly on a hot grill and turn frequently until the skins are blistered, blackened, and roasted all around.
Oven: Place chile in a single layer on a baking sheet. Broil or roast at high heat, turning frequently, until the skins are blistered and blackened.
Skillet: Use a dry, hot skillet or cast-iron pan. Turn the chile often until the skin is blistered and roasted.
Air Fryer: Roast at approximately 400°F, turning every few minutes, until the skins are blistered and charred. Cooking times will vary depending on your air fryer and the amount of chile.
2. Let the Chile Steam
Immediately after roasting, place the hot chile into a clean heat-safe bag or container and close it tightly.
Let the chile steam for approximately 30–60 minutes. Larger amounts of chile may need more time.
Steaming helps loosen the roasted skin, making the chile much easier to peel.
3. Peel Your Chile
Once the chile has steamed and cooled enough to handle, remove the chile from the bag.
For peeled chile, gently rub or pull off the loose outer skin. Remove the stem and seeds according to your preference.
Tip: Avoid rinsing the chile under water if possible — rinsing can wash away some of that delicious roasted New Mexico chile flavor.
4. Freeze for Later
If you peeled your chile: Allow it to cool, then place it into freezer-safe bags or containers. Remove as much air as possible, seal tightly, label, and freeze.
If you prefer NOT to peel it: Let the roasted chile cool completely in the sealed bag, then place the bag in the freezer. You can peel and prepare it later when you’re ready to use it.
