What Is New Mexico Chile?

At ABQchile, chile is more than a pepper—it’s a New Mexico tradition. Grown in the rich soil of Hatch, NM and throughout the state, New Mexico . Chile (often spelled chili elsewhere) is the fruit of the Capsicum plant and a cornerstone of New Mexico cuisine. Grown, roasted, and enjoyed for centuries, chile ranges from mild to extra hot and is prized for its rich flavor as much as its heat.

Our chile is enjoyed green or red, fresh, roasted, dried, or ground into powder. Heat levels range from mild to extra hot, and because chile is an agricultural product, flavor and heat naturally vary from crop to crop. That’s part of what makes every harvest special.

Chile vs. Chili — What’s the Difference?

  • Chile refers to the pepper itself—green or red, fresh or dried. In New Mexico, this is the correct and traditional spelling.

  • Chili refers to the dish, often called chili con carne, a stew made with meat, spices, and chile peppers.

When we say chile, we mean the pepper—not the stew. It’s the heart of New Mexico cooking and the flavor behind everything we do at ABQchile.
